Taste of Fall Smoothie
I love Fall favors! They are comfort foods, so I’m trying to think of ideas on how to incorporate them into my food plan in a healthy way. In Southern California the Fall remains fairly hot until mid to late October, so this smoothie will cool you down, while giving you that cozy Fall feeling. I tested my blood sugar about an hour and a half after drinking 3/4 of a cup of it, and it was at a very low 91! Here’s the recipe:
1/2 Can Organic Pumpkin
1/2 Can Organic Sweet Potato (softens the pumpkin flavor)
1/2 Can Light Coconut Milk (you can use heavy, or substitute this with your favorite milk or cream)
1-2 Tsp Cinnamon
1/2 Tsp Ginger
1/2 Tsp Nutmeg
2 Tblsp Raw Almond Butter
1 Tsp Vanilla
2 Tblsp Raw Cashews (optional…I like adding a little crunch)
1 Cup Ice (or more if you want it thicker)
Sweetener of Choice (to taste)
Blend them all together and enjoy!
