Low Carb Meringue Hearts
In the month of February we set out a mailbox for each member of the family, and Jim and I make sure to put a love note or Valentine in the kids’ boxes every day leading up to Valentine’s Day. It’s just a small way to let them know how much they are loved! Then, on Valentine’s Day, or a day close to it, we have a special family dinner, with hearts and other festive decorations and foods. Jim and I go on a date to celebrate our marriage, too, but not on the actual holiday…restaurants are a nightmare that day. These Low Carb Raspberry Meringue Hearts are an easy, delicious dessert, perfect for your Valentine’s Day festivities! They take a long time to bake, but are super easy to prepare, so they’ll be a great addition to our meal this year. I may add some dairy free chocolate fondue, as well!
These meringues are both low fat and low carb! They’re mostly made from egg whites, and I’ve added only a tablespoon of xylitol to sweeten them. There’s no added fat, unless you spray your pan with coconut oil. I recommend you use parchment paper, though, because they can get sticky!
I served my low carb meringues with reduced sugar raspberry jelly from Trader Joe’s, and dark chocolate chips. I love this jelly, because they don’t add fake sweeteners, they just add less sugar than other jellies. It’s tart, delicious, and way better for you than other jellies. If you want to make your dessert a little more home made, try serving it with my Low Carb Cran-Raspberry Sauce. The dark chocolate chips I buy are 63% cocoa, which means they have significantly less sugar (and more nutrients and flavor) than traditional chocolate chips.

- 4 Extra Large Egg Whites
- 1/2 Tsp Cream of Tartar (use a little less if you like them softer)
- 2 Tsp Xylitol
- 1/2 Tsp Vanilla
- 1/2 Tsp Raspberry Extract
- Preheat the oven to 200 degrees F and line baking sheets with parchment paper.
- Pour the egg whites into the bowl of you stand mixer, and start whipping them on high. Add the remaining meringue ingredients and whip until hard peaks form.
- Pipe the batter in heart shapes onto the prepared baking sheets.
- Bake at 200 degrees F for 1 1/2 to 2 hours. If you like them crispy, cook on the longer side. They'll turn light brown. Let the meringues sit for an hour or so before serving with raspberry jelly and chocolate chips. Enjoy!
