Tomato Avocado Salad
I’ve been focusing on giving you all healthy, easy snack recipes this week, and this Tomato Avocado Salad is a really good savory one! I’m continually amazed at how very good simple whole foods can taste! The salad is tasty and filling on its own, but you can also serve it as a dip or condiment. We LOVED it with salmon!!! If you’re planning on having a Memorial Day barbecue, this recipe would be a delicious addition!
I’m so excited, because the tomatoes in our yard are almost ripe. We usually harvest homegrown tomatoes all summer and a few weeks, or even a month, into the fall. Homegrown tomatoes are the best! They not only taste better, but they contain more healthy nutrients, like vitamins A and C, as well as lycopene. Don’t get me wrong, I’ll use a store bought tomato, like the ones in these pictures, but I definitely prefer the yellow and red cherry tomatoes from my yard. Part of the reason why homegrown tomatoes are so good and good for you is because you pick them when they’re ripe. Store bought tomatoes have to be picked before they’re fully ripe, or they’ll go bad by the time they get to you. By the way, if you have trouble with pests I’ve noticed the animals don’t eat my yellow tomatoes as much as the red ones.
This salad also has basil and avocados, which bring tons of flavor and nutrients. Avocados are full of healthy fats, protein, vitamins, and minerals. Basil is high in antioxidants and has a soothing effect on your body.

If you need to make this salad ahead of time make sure to keep the avocado pit in it and cover tightly. This will help keep it from turning brown.
