I love how food changes with the seasons!  Most children are now out of school for the summer, and grills everywhere are working hard!  It’s super easy to make a healthy meal on your barbecue, and I think you’ll love these Red Wine Grilled Chicken Skewers.  They’re super easy to make, and would be perfect for the Fourth of July, or any other summer get together.

My children scarfed them down, picking out the whichever veggies they didn’t like, of course. You’ve heard me say it before, and I’ll say it again.  Keep presenting your children with healthy options, but don’t push it too hard.  I usually ask the kids to at least take one bite, then Jim and I and the less picky children eat whatever they don’t.  My kids all like sweet peppers, but grilled onions and zucchinis have mixed reviews.  If you present healthy food to your kids in a creative way they’ll be much more likely to want to try it.  Every positive experience they have with nutritious food will help them learn to want it more.  JJ loved eating his chicken on a stick, and said he liked it more than a lollipop!

Grilled Chicken Skewers

These skewers make for a low carb, high protein, high fiber meal.  I actually have to eat more carbs than the skewers could offer, though, or my sugar level drops too low, so we used our extra marinade to make potato skewers, too.  I sliced white, red, and purple potatoes thinly, dipped them in the marinade, then placed them on the wooden sticks with a little space in between each one.  Jim then grilled them until the potatoes were soft.  Use waxy potatoes if you do this, because they are lower on the glycemic index than russets and other starchy potatoes.  Purple potatoes also have anthocyanins in them, which have tons of health benefits!

Ingredients
For the Red Wine Vinaigrette Marinade
For the Skewers
  • 1 Lb Chicken Tenders
  • 2 Large Bell Peppers
  • 1 Medium Purple Onion

Instructions
  1. Soak your wooden skewers in water while you prepare the ingredients. Combine all of the ingredients for the vinaigrette into a large bowl and mix them well.
  2. Chop all of the veggies into roughly the same size. Place the chicken and veggies in the marinade and let them sit for a few hours or overnight, if possible. Honestly, I didn't have time to marinate them for long, and it was still really tasty!
  3. When you are ready, heat your grill up to medium heat and start placing the meat and veggies onto skewers. Alternate ingredients however you see fit. I poked the stick through my chicken pieces 3 times (folded in a zigzag way).

  4. Grill the skewers until the chicken is cooked all the way through, turning them over a few times. Enjoy!
