Rosemary Chicken Tenders (+ a Dinner Idea)
It’s that time of year, where we all start using the grill! I made these Rosemary Chicken Tenders for dinner tonight, and we’ll have the left overs tomorrow, as well. I figure if I’m taking the time to marinate something I should make it count for more than one meal! Many people complain about how much time it takes to eat healthy, but it really doesn’t have to. We served the chicken with fresh veggies from the yard, which were grilled right alongside the chicken, fresh salad greens and tomatoes from the yard, Lick the Empty Bowl Guacamole, and reduced guilt corn chips from Trader Joe’s. It’s healthy and EASY…not to mention really tasty!!! This recipe is similar to my other balsamic tenders, but quite a bit simpler.
I’m just going to tell you the ingredients, and let you play around with the amounts. It’s hard to go wrong here, but try not to overcook the chicken. If you do burn it (like we did), try to cut off the black parts, because those are carcinogenic. Here’s the recipe:
Balsamic Vinegar (other vinegars would work, too)
Olive Oil
Sea Salt and Pepper
Fresh Rosemary
Red Onion (cut into large chunks, so you can grill it, too)
Garlic Powder
Chicken Tenders
Just mix the ingredients together, let them sit for a few hours, then grill them up. Enjoy!
