Orange Fudgsicle Dairy Free Ice Cream

My mom made some really yummy ice cream for the kids today! As you can see, they hated it!  Ice cream is actually very easy to make healthier.  This recipe only calls for half a cup of sugar, and uses almond and coconut milks.  The coconut cream is fatty, but it’s healthy fat.  The fat is also beneficial, because it causes the sugar to absorb into your system at a much slower rate.  Feel free to use light coconut cream, but I like the full fat kind!  You’ll need to use an electric ice cream machine.  Make sure the bowl has been frozen for a few days, or it won’t work!  Here’s our recipe:

1 1/2 Cups Unsweetened Almond Milk

1/2 Cup Coconut Sugar or Xylitol (xylitol will help lower the glycemic index)

1 Cup 60% Cocoa Chips (Sprouts has them, or look online)

1 Can Coconut Cream

1 Tsp Vanilla

1 Tbsp Orange Zest

Add the almond milk, chocolate chips, and sugar to a microwaveable bowl.  Microwave until chips are melted, and mix them into the milk.  Start by heating it for 30 seconds, stir, then heat in 10 second increments, until it’s ready.  Stir in the coconut cream, vanilla, and orange zest, until well blended.  Chill mixture for at least 2 hours.  Turn your ice cream machine on, and pour the mixture into the frozen bowl.  Let it mix until thickened.  Enjoy!  (I know my kids did!)
