Lick the Empty Bowl Guacamole

Once you taste this dairy free guacamole you’ll understand why I call it “Lick the Empty Bowl Guacamole!”  It’s so good, you just have to enjoy every last bit of it!  The kids act like sharks in a feeding frenzy whenever I make it.  Emily doesn’t like avocados, but she LOVES this stuff!  I actually prefer the flavor of this recipe over others that include sour cream or plain yogurt.

Sometimes I’ll eat this guacamole with organic corn chips for lunch.  It’s really a complete meal in and of itself!  Avocados have lots of micronutrients, fiber, protein, and healthy fat!  You can also use it on tacos (you can use lettuce leaves instead of tortillas), as a dip for veggies, on a burger patty, or with gluten free, whole grain crackers.  Really, the possibilities are endless!  If you’re trying to be strict paleo just dip veggies in the guac, or serve it on top of meat.  If you want to make it paleo and vegan I think the guacamole would be super tasty on top of a grilled portobello!

A good tip for keeping guacamole green (no one wants brown guac) is to set the pits aside and add them back into the bowl when you are done smashing the ingredients together.  The pits work like magic, and sometimes my guac even keeps over night (wrapped tightly with plastic wrap)!

Serves 6

The “Must Haves”

  • 3 Medium Avocados
  • Lemon Juice to Taste (I like about 2 Tbsp)
  • 1 Tsp Garlic Powder
  • Sea Salt and Pepper to Taste

The “Add-ons” 

  • 1/2 Cup Sliced Cherry Tomatoes (optional)
  • 1/2 Cup Chopped Cilantro (optional)
  • 1/2 Cup Chopped Green Onions (optional)
  • 1/2 Cup Frozen Organic Sweet Corn (optional…doesn’t matter if it’s frozen or thawed…it’ll thaw in the mix)

Mash together avocados, lemon juice, garlic powder, and salt, using a pastry cutter or a couple knives.  Stir in optional ingredients, or just eat it like that.  You can add some chili powder if you like it spicy.
