Gluten Free Grilled Peach Crisps
If you love peaches and are committed to eating clean, you have to try these Gluten Free Grilled Peach Crisps. When you take the first bite you won’t think about how healthy they are, you’ll think they’re serious comfort food! They’re gluten and dairy free, and do not have any refined sugar.
I call the oatmeal mixture “Crispy Yum Yums,” and it would be good in a variety of different contexts. You can use it in any other recipe that calls for granola, or just add almond milk and eat it for breakfast. The kids couldn’t get enough of it!
This recipe serves 6-8 people.
For the Crispy Yum Yums:
- 1 Cup Gluten Free Quick Cooking Oats
or Whole Grain Gluten Free Oats
- 1/4 Cup Melted Coconut Oil
- 1 Tsp Vanilla
- 2 Tbsp Raw, Unfiltered Honey
- 1 Tsp Cinnamon
- 1/2 Cup Pecans, Chopped
- Pinch of Sea Salt
Stir together all of the ingredients in a medium bowl. If you use whole grain oats you may want to pulse them in the food processor a few times. Cook in a skillet over medium heat, until it starts to get crispy and happy.
- 6 Peaches, Cut in Half
- Coconut Oil Spray
Heat a grill over medium heat. Spray the fleshy side of the peaches generously with the oil. Place them, oil side down, on the grill and cook for about 3 minutes. Remove from the grill and top with the Crispy Yum Yums. Drizzle with coconut cream and garnish with a mint sprig. We really enjoyed these Gluten Free Peach Crisps as a dessert, but they would make an awesome breakfast, too!
