Cilantro Lime Sauce

I made this Cilantro Lime Sauce the other day, and as you can see from the picture, it pretty much tastes good on all that is savory.  I wasn’t sure if the cilantro would be too strong, but its strong flavor is balanced out nicely by the lime.  Seriously, this is SO good!  My recipe was inspired by one from the Forks Over Knives cookbook, but is actually quite different from theirs.  I recommend adding that cookbook to your collection, whether or not you are vegan.  It will inspire you to be more creative with your veggies and other dishes, and teach you how to add tons of healthy nutrients.

One of the health benefits of cilantro is that it is really good at helping you detox.  I stored the leftovers in a cleaned out glass almond butter jar in the fridge.  Here’s the recipe:

  • 2-3 Cups Cilantro
  • 1 Can White Beans (rinsed and drained)
  • 2 Tbsp Sesame Oil
  • 3 Cloves Garlic
  • Juice of 2-3 Limes (I used 2, but thought it could use more)
  • 2 Tsp Gluten Free Soy Sauce (Check your labels if you need it to be GF!  Most have wheat in them!)

Put it all in a food processor and blend.  If it’s too thick you can add some water.
