Chocolate Sunbutter Smoothie
These Paleo Chocolate Sunbutter Smoothies are filling, healthy, and delicious. You would never believe that there’s cauliflower in there. This vegan, paleo smoothie is great for breakfast, snack, or dessert!
Can you tell that I love to drink my nutrition? I especially love it when there’s chocolate involved! Yesterday I had a fun conversation with the employees at Trader Joe’s as I checked out about how healthy those huge 1 pound, 72% cocoa chocolate bars are. One serving has 40% of your daily iron needs, and 5 grams of fiber.
Of course, chocolate isn’t the only superstar in this smoothie! SunButter, cauliflower, hemp hearts
, dates
, and coconut cream
combine to fill you up with antioxidants, healthy fats, protein, fiber, and other vital nutrients. The Chocolate Sunbutter Smoothie will give you the energy you need to keep up with your busy lifestyle (I’m just assuming that you’re all busy…if not, good job).
If you would like more ideas on how to make healthy smoothies, I highly recommend the book, The Green Smoothie Bible: 300 Delicious Recipes. Not only does it include tons of great recipes, but there are great explanations of how the ingredients help you! It’s on my “must have” list of healthy resources.
Before we get to the recipe for the Chocolate Sunbutter Smoothies, I want to invite you to join with others who are making healthy changes. I’d love to walk alongside you in your journey towards wholeness and health! Jesus said, “I have come that they may have life, and have it to the full!” Freedom from food addictions is part of having a truly full life.
Serves 1-2
- 1/2 Cup Ice
- 2 Tbsp SunButter
- 2 Dates
- 1 Medium Sized Chunk of Cauliflower (about 1/4 cup if chopped small)
- 1/2 Cup Light Coconut Cream
or Unsweetened Almond Milk
- 2 Tbsp Very Dark Chocolate
(I used 2 1/2 chunks of the 70% cocoa bar from Trader Joe’s)
- Raw Hemp Hearts
for Sprinkling
Combine all of the ingredients, except hemp hearts, in your blender. Blend on high until smooth. I think the best way to eat this smoothie is with a spoon that has been dipped in sunbutter! Enjoy!
