Turning Plain Beans into a Meal

Image

Beans are an inexpensive, healthy way to feed your family.  All of the kids were happy with this lunch today!  I put homemade beans on the stove this morning, and they were ready by noon (no overnight soaking).  You can use canned beans, too, but it only took me about 10 minutes of prep time for these, and then I checked and stirred them periodically.  You can find my recipe under the “Beans” category.

To turn plain beans into a meal add a few sprinkles of cheese, sliced tomatoes, cilantro, salsa, and “Lick the Empty Bowl Guacamole” (find it in the “Sauces and Dressings” category).  So simple, but so good!  Serve it with whole grain tortilla chips, or the baked blue corn chips from Trader Joe’s.  Enjoy!
