If your palate is ready for a change of pace, this bean dip is a tasty spin on traditional flavors! My mother in law made a similar one for us a few years ago, and I recently dug up the recipe. The sun-dried tomatoes give it a nice tangy punch! It makes for a filling, healthy snack or lunch when paired with baked blue corn chips and avocado!
Beans are a great option for someone who is trying to lose weight or reverse diabetes! They are filling, but not high in calories. Your body can’t actually absorb all of the calories included on the label! Some of them are from resistant starch, which passes right through your system, feeding the healthy gut flora on its way out! Beans have protein, fiber, iron, and other micronutrients, making them a complete meal in and of themselves!
If you’re like me, and you would rather not take the extra time to measure out all your ingredients, you’ll enjoy making this sun dried tomato bean dip. Just eye-ball it! Here’s the recipe:
- 2 Cans Organic Beans (I used black and white)
- 1 Cup Chopped Cilantro
- 1 Cup Chopped Green Onions
- 1 Cup Chopped Sun-dried Tomatoes (I use the ones in a dry bag, not in olive oil…who needs the extra calories!)
- Salt and Pepper to Taste
- 2 Tbsp Olive Oil
- 3 Tbsp Red Wine Vinegar (I used Pomegranate Vinegar)
- 1 Tbsp Cumin
- 2 Tsp Lime Juice
Mix together olive oil, salt, pepper, vinegar, cumin, and lime juice in a small bowl. Combine the rest of the ingredients in a medium or large bowl and stir. Stir in the dressing. This recipe is quick, easy, and inexpensive. Enjoy!
