Simple Garbanzo Bean Mint Salad
I love me a good bean salad! My Aunt Christy made this many years ago and I just thought about it last week, so she sent me the ingredient list. I’ll tell you the amounts that we used, but feel free to play around with it until it tastes good to you! I think pine nuts and sweet onion sliced really small would taste good in there, too. We only had one can of garbanzo beans in the pantry, so we substituted one can with black eyed peas. Here’s the recipe:
2 Cans Organic Garbanzo Beans
1/2 Cup Fresh Chopped Mint
1-2 Cups Diced Tomatoes
4 Tbsp Balsamic Vinegar
1 Can Sliced Black Olives (4 oz)
Salt to Taste
Mix them all together in a large bowl, let it sit for a couple hours (if you have time…you can eat right away), and enjoy on it’s own, over spinach, with crackers, etc, etc!
