This Red Quinoa Kielbasa Bowl is a quick and easy lunch or dinner option! The recipe calls for raw cheese. Raw cheese maintains more nutrients than pasteurized cheese, and it tastes better! You can find it at most grocery stores.
I love to use quinoa in my recipes, because it is high in protein and fiber. Many consider it to be a superfood! I believe all grains should be eaten in moderation (half a cup to a cup per serving), but this one in particular does have some great health benefits.
I did not include extra oil in this recipe. Since there is fat and salt in the kielbasa and cheese, there’s no need to add more. All of the ingredients are at Trader Joe’s. Feel free to use lots of extra basil!
- 1 Cup Cooked Red Quinoa
- 3 Oz Nitrate Free Turkey Kielbasa Chunks
- Slices of Raw Gruyere Cheese
- 1 Cup Basil, Ripped into Smaller Pieces
- 1/2 Cup Onion, Diced (optional)
- 2 Cloves Garlic, Diced (optional)
Sauté the onions in a little coconut oil until light brown. Add garlic for the last 2 minutes. Place warm quinoa, onions, garlic, and kielbasa in a bowl, then top with cheese and basil. Enjoy!
