Berry Chocolate Almond Rice Cakes are a great way to satisfy your sweet tooth, without flooding your system with sugar and packing on the pounds!  They’re so simple to make, too.  I eat them for dessert about 5 nights per week!  Just top a brown rice cake with raw almond butter, dark chocolate ganache, and frozen berries.  If you don’t feel like taking the 5 extra minutes to make the ganache, just sprinkle on some dark chocolate chips.  Coconut cream, sunbutter, fresh fruit, and flax seeds are other healthy toppings that would taste good on these.

With a little creativity people with diabetes can continue to enjoy what they eat, without destroying their bodies!  Berries are lower in sugar than other fruits, so they’re a great option for a diabetic.  Brown rice cakes have more fiber (and nutrients, for that matter) than white rice cakes.  Of course, the almond butter has fat and protein, and the chocolate has fat and fiber.  Protein, fat, and fiber lower the Glycemic Index number of the food you’re eating by slowing down the rate at which sugar enters your blood stream.

By the way, the best place to buy raw almond butter is Trader Joe’s.  It’s much less expensive there than the other places I’ve found it!
