Gluten Free Queso Fresca Tacos
These Gluten Free Queso Fresca Tacos had a ton of flavor and nutrients! They’re also inexpensive and easy to make, so that ticks all the boxes! Try to use corn tortillas that only have 2-3 ingredients. The ones we use are from Trader Joe’s, and they have corn, water, and lime juice. Jim cooks them directly over the flame on our gas stove and they come out with that lightly charred flavor. So good! Here are the ingredients:
- Scrambled Eggs or Ground Turkey Meat (I flavor mine with cumin, garlic, salt, pepper, and paprika to mask the weird turkey flavor)
- Queso Fresca
- Cilantro
- Green Onions
- Fresh Salsa
- Avocado
- Corn Tortillas or Large Pieces of Lettuce
Pile the ingredients up on your corn tortillas or a large piece of lettuce. It’s simple and good!
A note on scrambled eggs: The best way to make them is to add a little sea salt, pepper, almond milk, and plain yogurt, then cook them slowly over low heat, stirring and scraping the bottom often. Obviously skip the yogurt if you can’t have dairy.
