Paleo Sunbutter Brownies

Paleo Sunbutter Brownies Sometimes you just need some chocolate and peanut butter!  These Paleo Sunbutter Brownies were inspired by a recipe from Elana’s Pantry (check out her site if you haven’t…great ideas!).  If you or a loved one has a peanut allergy, sunbutter is a great substitute!  If you want to make them Paleo, don’t use xylitol as part of the sweetener…not sure if Brandy is Paleo).  Here’s the recipe:

  • 3 Eggs
  • 1/3 Cup Raw Honey (I used partly xylitol to keep it lower glycemic)
  • 2 Tbsp Brandy
  • 1 Tsp Apple Cider Vinegar
  • 1 Tsp Sea Salt
  • 1/2 Cup Cocoa Powder
  • 1 Tbsp Coconut Flour
  • 1 Tsp Baking Soda
  • 1/2 Cup 60% Cocoa, Dairy Free Chocolate Chips
  • 1/2 Cup Walnuts (optional)

Preheat oven to 350 degrees and grease a small baking dish (8×8 or equivalent).  Mix together wet ingredients and dry ingredients in separate bowls, then combine.  Pour into prepared dish and bake for 15-20 minutes, or until center is set.  Enjoy with coconut cream! Here’s a picture of the uncooked batter…brownie batter is the best! Paleo Sunbutter Brownies
