Manchego Salad

Believe it or not, I’m not really a salad person.  I love the taste of salad, but it doesn’t really fill me up.  I’ve read all sorts of books and heard all sorts of nutritionists, telling me that salad is filling, but I haven’t actually experienced that!  In order for a salad to fill me up it has to have some kind of meat and starch.  This one fit the bill!  It was so tasty that I ate it for lunch and dinner!  There’s something about the combination of the roasted chickpeas and manchego cheese that is so good!  Manchego is sheep’s milk cheese, which is a little better for you than cow’s milk.  It still should be enjoyed in moderation, though.  Toss together the following ingredients, and enjoy!  Make sure to add the cheese after the dressing, so it doesn’t get soggy.

Organic Mixed Baby Greens (I like the package with herbs in it from TJ’s)

Rosemary Roasted Chickpeas (see link at end)

Sliced Manchego Cheese

Red Wine Vinaigrette (I pour some of the oil out before shaking the bottle to make it low fat)

Chicken Chunks

Avocado

Salt and Pepper to Taste
