My sweet cousin brought us dinner last night, and I had to share it with you all! So yummy and healthy! You could add some lean chicken or turkey if you want the meat. You can also leave out the cheese to make it dairy free and vegan. She stuck pretty closely to the link I’ve included below, but added some shredded zucchini, cayenne pepper, and extra corn.
