Almond Crusted Turkey Tenders

gluten free breaded turkey tenders
These gluten free breaded turkey tenders are moist and tender, with tons of flavor!

I think you’ll love this recipe for gluten free breaded turkey tenders!  I found this cut of meat at Trader Joe’s, and am very excited to try out new recipes with it.  The almond flour keeps the meat moist and tender, and it adds a nice depth of flavor.  If you need to make a fancy dinner for guests, but don’t have a lot of time to work on it, this would be a great option!  They are very easy to prepare.  Try serving them with my cranberry sauce!

Here’s the recipe:

Almond Crusted Turkey Tenders 2

1.5 Pounds Turkey Tenders (about 3)

Bowl or Plate #1:

  • 1/4 Cup White Bean Flour (organic corn starch works, but isn’t as healthy)
  • 1 Tsp Paprika
  • 1 Tsp Sea Salt

Bowl or Plate #2:

  • 2 Eggs
  • 2 Tbsp Water

Bowl or Plate #3:

  • 1 Cup Almond Flour
  • 3 Tbsp Italian Seasoning
  • 1 Tsp Garlic Powder
  • Salt and Pepper to Taste

Set up your prep space as seen below:

The bowl closest to the turkey has paprika, bean flour, and salt. The next bowl has eggs and water, and the final bowl has almond flour, salt, pepper, garlic powder, and Italian seasoning. Make sure to stir them well!

Preheat your oven to 400 degrees F.  Use scissors to cut each tender in half lengthwise.  Dip one strip at a time in the bean flour mixture, then the egg wash, and finally the almond flour mixture, making sure to coat entirely.  Set them on a greased wire rack, placed over a baking sheet, as seen in the next picture:

Bake for about 30 minutes.  I checked mine at 25 minutes by cutting the largest one open with a knife.  If they are still a little raw cook for another 5 minutes.  Try not to overcook!

Oven Roasted Potatoes and Sautéed Garlic Greens would make for excellent side dishes to round out the meal!
