Simple Bean, Spinach, and Chicken Soup

imageWhile the kids helped my mother in law decorate her Christmas tree today she gave me the ingredients to make this soup.  It was really easy, really yummy, really healthy, and really affordable.  Another keeper!  Try to plan it for the day after you have chicken and a whole grain for dinner.  That way you can use the leftovers in the soup.  Serious time and money saver!  Here’s what we did:

2 Boxes of Organic Chicken Broth (8 Cups)

3 Cans Organic Beans, Drained and Rinsed

3 Cloves Garlic, Diced

1 Cup Chopped Chicken (you can use canned, but try to buy organic, so it doesn’t have bpa)

1 Cup Cooked Whole Grain (we used quinoa)

Salt and Pepper to Taste

1/2 Cup Fresh Squeezed Lemon Juice

4 Cups Organic Baby Spinach

Place all of the ingredients, except lemon juice and spinach, into a large pot.  Bring it to a boil.  Turn off the heat, and add the spinach and lemon juice.  The spinach will wilt, but shouldn’t loose it’s color.  Serve it hot!  So easy!  Enjoy!
