Red, White, and Blue Pancakes (Gluten Free, Dairy Free, Low Carb)

Our favorite 4th of July breakfast is pancakes with strawberries, blueberries, and whipped cream.  Very patriotic, right?  Here are some ideas on how to make it healthy.

First, I have a few different recipes for pancakes.  Here are the links:

Perfect Chocolate Pancakes (my favorite): http://greatfoodlifestyle.com/perfect-chocolate-pancakes-gluten-free-dairy-free-and-low-glycemic/

Almond Buckwheat Pancakeshttp://greatfoodlifestyle.com/almond-buckwheat-pancakes-with-berry-compote/

Paleo Banana Pancakeshttp://greatfoodlifestyle.com/banana-pancakes-paleo/

Of course, fruit is already healthy, so you don’t need ideas on that!  Berries are particularly good for you, because they are lower in sugar and higher in antioxidants than other fruits.

Here are a couple recipes to replace whipped cream:

Whipped Cashew Cream: http://greatfoodlifestyle.com/whipped-cashew-coconut-cream-dairy-free-and-some-good-reasons-to-go-light-on-dairy/

Have a fun and healthy 4th of July!
