4th of July is just around the corner, and you’re probably starting to plan the menu!  These Paleo Jello Stars would be a delicious, refreshing, and fun addition to your party.  The kids loved them, and so did my husband, Jim.  They’re also really easy to make, but I have to warn you not to use too much liquid!  If you do, they won’t harden enough to make shapes, but you can still scoop it into bowls and eat it with spoons.  Have fun experimenting with different types of fruit!  I tried the stars with blueberries and strawberries, hoping to make them look more patriotic, but they turned pink and purple, instead of red and blue.  Ha!

Did you know that gelatin is actually quite good for you?  It’s honestly a little gross to think of where it comes from…the collagen in animal bones…but gelatin really is just amino acids, the building blocks of protein.  It is particularly high in the amino acid, glycine, which helps your liver clean the junk out of your body.  Keeping the liver healthy is especially important for diabetics, because the liver is one of the primary organs involved in blood sugar regulation.  Gelatin is also good for your skin, hair, teeth, and nails, so go ahead and have fun playing around with recipes for it.  I’m just getting started!  Be on the lookout for strawberry-basil jello in the next couple of weeks.  I think something with chocolate in it is coming out of my kitchen soon, too (shocker, right?).

By the way, you may know that I recommend using xylitol, instead of honey or other sweeteners, if you are diabetic or really need to keep the carbs low.  Xylitol is a sugar alcohol, taken from birch trees, that is very low carb.  It tastes and bakes like sugar (no nasty aftertaste), but won’t spike your blood sugar levels.  It isn’t paleo, but is generally a better fit for people like me!  I sometimes will use part honey, part xylitol, just because I love the flavor of honey.

Instructions
  1. As you heat up your water, purée the fruit in your food processor. Make it as smooth as you can, so that it is easy to cut the jello into shapes at the end.
  2. Combine the boiling water and gelatin in a medium bowl and stir it until the gelatin is completely dissolved. Then, stir in the fruit, honey, and lemon juice.
  3. Line an 8x8 baking dish with parchment paper and pour the mixture into the paper. Let it cool for at least 5 hours.
  4. To prepare your drizzle, simply combine the honey and coconut cream. Let them sit at room temperature for a while, so they don't become too hard to drizzle.
  5. When the jello has set up drizzle it with the coconut cream mixture.
  6. Pull the parchment paper out of the baking dish gently. The jello will be in the shape of a large square, sitting on top of the paper. Use a star shaped cookie cutter to make the stars. (see note)
  7. Gently remove the stars from the paper onto a plate with your fingers or a spatula. Serve the scraps in a bowl on the side. Enjoy!

Recipe Notes

If your jello hasn't set up enough you can let it sit in the fridge, uncovered, overnight.  Some of the moisture will evaporate.  If it still isn't hard enough to make shapes out of it, you can also try freezing it.  If that still isn't working, serve it in bowls and use less fruit next time.
