Ground Turkey and Baked Sweet Potato
This is another filling, inexpensive, tasty, healthy meal for a busy night (and the left overs made an awesome lunch!). The picture is of Emily’s plate. Jim and I had a little more meat and a whole potato, and were definitely full!
To bake the sweet potatoes spray a pan with coconut oil, place the washed potato in the pan, and spray it with more coconut oil (make sure you’ve poked it with a fork so steam can get out). Bake it at 375 degrees for about an hour. If you won’t be home an hour before dinner you can prepare this ahead of time, and use the delay start feature on your oven, or you can just cook it in the microwave. Wash and poke the potato, wrap it with a damp paper towel, and cook on high for about 4 minutes, or until tender (it depends on the size of the potato). Serve it with Smart Balance, salt, pepper, and a little cinnamon.
I season my ground turkey meat with salt, pepper, garlic powder, smoked paprika, dried oregano and basil, and cumin. When it’s done cooking I also add anise seeds, but only to Jim’s and my portions, because the kids don’t like it. I use the lean meat, but not the almost fat free kind, so I don’t add extra oil to the pan before cooking.
Add fruit and salad to the turkey and potato, and you have a full meal! Enjoy!
Aren’t sweet potatoes pretty! The organic ones are especially orange! I love to eat them with the skins on, because I enjoy the texture and it adds fiber.
