Grilled Manchego Portobellos

This is a very simple, tasty addition to any meal or snack! Mushrooms have a long list of health benefits, including fighting cancer, boosting your immune system, and they have tons of vitamin D in them. Most Americans are low on vitamin D. Here’s how you make them:
Wipe of excess dirt from a large portobello mushroom cap. Spray it with coconut oil on both sides, and sprinkle with salt and pepper. Grill it for a few minutes on each side, until it becomes soft. I flipped mine a few times to avoid burning. Towards the end of the grilling I added a little balsamic vinegar to the bottom side. Stop flipping them at this point. When they are soft add manchego cheese and let it melt. When the cheese is melted remove the caps from the grill and sprinkle with raw pine nuts. Enjoy!
