Grain-free Turkey Meat Loaf
Last week I got a craving for meatloaf, so I decided to make a healthy version of it for the family. JJ wasn’t sure about it, but the rest of us loved it! I think I will add it to our list of “go-to” easy dinners!
In order to make it healthy, I loaded this grain-free turkey meatloaf full of veggies, and substituted the bread crumbs with coconut flour. The lean turkey meat is, of course, a great source of protein, but did you also know that turkey is high in tryptophan and vitamin B12? Coconut flour absorbs a lot of liquid, which helps the texture of the meatloaf, and it is also high in fiber. Carrots, celery, and onions are the nutrient rich veggie stars that bring tons of healthy flavor to this dish. Doesn’t it feel good to serve food that gives life and health to the ones you love?

- 1 Tbsp Coconut Oil
- 1/2 Cup Diced Onion
- 1/2 Cup Diced Carrot
- 1/2 Cup Diced Celery
- 1 Tbsp Coconut Flour
- 1 Egg
- 1 Tsp Sea Salt (or to taste)
- 1/2 Tsp Freshly Cracked Pepper
- 1/2 Tsp Garlic Powder
- 1 Tsp Cumin
- 1 Tsp Smoked Paprika
- 2 Tbsp Organic Ketchup
(try to find one made with all natural, whole food ingredients…or do a search for “paleo ketchup” and make it from scratch)
- 1 Tsp Organic Mustard
- About 1 1/2 Lbs of Lean Turkey Meat (not fat free, though…yuck)
- 3 Slices of Nitrate Free Bacon (optional)
- Extra Organic Ketchup for the Top
Spray a 9 inch loaf pan with coconut oil and preheat the oven to 375 degrees F. Melt the coconut oil in a large ceramic non-stick skillet
over medium heat. Add the onion, carrot, and celery, and sprinkle them with a little extra sea salt. Sauté the veggies until they’re soft and light brown. Stir the coconut flour into the veggies and set aside.
Combine the egg, sea salt, cracked pepper, garlic powder, cumin, paprika, ketchup, and mustard in a large bowl and whisk them together. Add the turkey meat and veggie mixture, then stir until it’s well combined.
Place the meat mixture in your greased baking dish and cover it with ketchup and the 3 pieces of bacon. Bake your grain-free turkey meatloaf at 375 degrees for about an hour. Use a knife to cut into the middle and make sure it’s fully cooked before removing it from the oven. Drain any extra liquid before serving it. Enjoy!
