Dried Fig and Greens Salad
I’m always on the lookout for a creative way to mix up a salad! Today I found dried figs at Sprouts for a decent price, so I had to try them. Salads are really good with a little kick of tartness from dried fruit, pomegranate seeds, or something else like that. Dried figs have iron, calcium, vitamin C, and tons of fiber in them. Plus, they have less sugar and calories than raisins. I’m not going to give amounts, because that is up to you (I ate much more than what is pictured above…realized I should snap a shot part way through!). Here’s what I had for lunch, though, and it was so good!
Mixed Baby Greens
Cottage Cheese
Dried Fig (I cut one into small pieces, and mixed it in)
Grape Tomatoes
Walnuts
Your Favorite Citrus Vinaigrette (I mixed orange vinegar with the red wine vinaigrette from Trader Joe’s)
