If you’re looking for an easy weeknight meal to add to your “go-to” list, I think you’ll love this one!  This Coconut Curry Chicken, with sautéed onions, only took about 25 minutes (or less) to prepare, and it is super tasty and healthy!  Two of my kids loved it, but the little guys didn’t.  If you have some picky eaters it’s easy to adapt this recipe to fit them, too.  Simply leave out some of the chicken tenders from the marinade, and cook them with sea salt and pepper.  My littles like to dip theirs in organic ketchup.  I love easy meals that please both parents and children!

Curry powder is full of healthy goodness!  It helps you detox, strengthens your immune system, promotes healthy heart and brain function, and fights cancer.  The turmeric, which is in the curry powder, is also anti-inflammatory, so I added a little extra for this recipe, since it’s almost spring and many people suffer from allergies.  For more information on the health benefits of curry powder, check out this article.

  1. Combine the coconut cream, curry powder, sea salt, pepper, and turmeric in a large baking dish. Stir well.

  2. Stir the onions into one side of the dish, and the chicken into the other. Make sure each piece is completely coated.

  3. Heat 2 separate cast iron or ceramic non-stick skillets over medium heat. Coat them with coconut oil.
  4. Cook the onions in your smaller pan, and the chicken in your larger one. The onions are done when they are soft and light brown on the edges.
  5. Make sure the chicken is done by cutting the middle of one piece. If there's any pink, cook a little longer. I LOVED this recipe served over arugula!!! Enjoy!

If you're really in a hurry I suggest using a large cast iron griddle. You should be able to fit all of the chicken on there, and cook it all in one round.
