Dairy Free Chocolate Cream Pie
Dairy Free Chocolate Cream Pie is delicious, rich, chocolatey, and easy to make! It is SO rich, that one little slice goes a long way! To save on time I used a pre-made gluten and dairy free pie crust. The filling is Paleo. The best part? All you really need to pull this all together is your food processor!
The chocolate pudding for this pie is made with avocado. You probably know that avocado is full of healthy fats and fiber, but did you also know that it has a ton of protein? Avocado also supplies vitamin C, vitamin B, iron, calcium, and magnesium. It’s a pretty complete meal in and of itself!
Before we get to the recipe for the Dairy Free Chocolate Cream Pie I want to invite you to join with others who are making healthy changes, if you haven’t done so already. I’d love to walk alongside you in your journey towards wholeness and health! Jesus said, “I have come that they may have life, and have it to the full!” Freedom from food addictions is part of having a truly full life.
Serves 6-8
For the Chocolate Pudding and Crust:
- 1 Cup Avocado
- 1/2 Cup SunButter
- 3/4 Cup Coconut Cream
- 1 Tsp Vanilla
- 1 Tsp Organic Cinnamon
- 1/2 Tsp Organic Cardamom
- 1/3 Cup Unsweetened Cocoa Powder
- 1/4 Cup Coconut Sugar
or Xylitol
(not Paleo, but a great natural option for diabetics)
- 1/4 Tsp Sea Salt
- Pre-made 8″ Gluten-Free Pie Crust (I found a gingersnap one, or you can make a Paleo one out of cashew flour…see my Apple Pie Tartlet recipe for an idea, but you’ll need less than what that recipe calls for)
Combine all of the ingredients in your food processor, and run it until the mixture is smooth and creamy. Taste the pudding to make sure it’s sweet enough for you. If not, add more coconut sugar or xylitol. Pour mixture into your 8 inch pie crust, and set it in the freezer while you prepare the other ingredients.
For the Whipped Cashew Cream:
- 1/2 Cup Coconut Cream
- 1/2 Cup Raw Cashews
- 1 Tsp Organic Cinnamon
- 1 Tbsp Coconut Sugar
or Xylitol
- 1 Tsp Vanilla
Place all of the ingredients in your food processor or blender, and blend them until they are smooth. This is a thick mixture, so you may need to stir it with a spoon a few times to ensure even blending.
Spread the cashew cream on top of the cooled chocolate cream, and sprinkle with Paleo hot cocoa mix (or just unsweetened cocoa powder). Enjoy!!!
