Macaroons are so easy to make, and the flavor possibilities are endless! These Cran-Orange Paleo Macaroons do a little happy dance in your mouth! The kids, Jim, and I scarfed them down. They make for a unique addition to your home made Christmas cookie list, and definitely have a big “wow” factor!
Of course you don’t make cookies because they’re healthy, but these ones actually are. If you are trying to stay healthy, or are fighting a disease, like diabetes, Paleo macaroons are a great option! Coconut has lots of fiber and healthy fat in it, and has been shown to help regulate blood sugar levels. Cranberries provide strong antioxidants and fiber. Almond flour and egg whites bring protein to the table, and dark chocolate will help balance your brain chemistry. Yay for healthy cookies that are almost a complete meal in and of themselves! Coconut rum? Well, ok…you may want to skip that part, but it really adds a great flavor!!!

Makes About 20 Cookies
- 2/3 Cups Coconut Sugar or Xylitol
- 2 Cups Shredded, Unsweetened Coconut
- 1/2 Cup Almond Flour
- 1 Tbsp Coconut Flour
- 1/4 Tsp Sea Salt
- 1 Tsp Baking Soda
- 5 Large Egg Whites
- 1/2 Tsp Almond Extract
- 1 Tbsp Orange Zest
- 2 Tbsp Orange Juice
- 1 Tbsp Coconut Rum (probably not Paleo)
- 1 Cup Chopped Fresh Cranberries
- 1 1/2 Cups Extra Dark Chocolate Chips (link is not Paleo, but lower in sugar) or Paleo Chocolate Chips
Preheat the oven to 350 degrees. Combine the dry ingredients in a bowl and set aside. In a separate bowl beat the egg whites until they get a little frothy, then beat in the rest of the wet ingredients. Add the dry ingredients to the wet, and stir until combined. The dough will be fairly crumbly, so use your hands to bring it together and form balls that are about 1 1/2 tablespoons each.
Place the Paleo macaroons onto a baking sheet lined with parchment paper and bake for 15-18 minutes. They should be brown around the bottom edges and a little bit brown on top. Let the cookies cool on a wire rack while you prepare the chocolate.
Melt the chocolate chips in a double boiler or microwave. If you use the microwave start with 30 seconds, then do it in increments of 10 seconds, stirring in between, until the chips are melted. Make sure you don’t accidentally add any liquid to the chocolate, or it gets weird and you can’t work with it! Dip the bottom of the Paleo macaroons into the chocolate, then place them on parchment paper until the chocolate is set again. Drizzle melted chocolate on top of the cookies and let them cool in the refrigerator. Enjoy!
