Apple Fennel Salad
My mother in law had us over for lunch a while back, and she served this! It was so tasty! Fennel was actually featured on the Dr. Oz Show recently. He demonstrated how the soluble fiber helps detox your liver, and the insoluble fiber helps clear out your colon. Plus, it tastes really good! This is an easy, simple recipe, and 3 of my kids loved it…keeper! Here’s the recipe:
- 1 Fennel Bulb, Chopped
- Fennel Leaves to Taste, Cut into Small Pieces with Scissors
- 2 Small Apples, Cored and Chopped
- 1/2 Cup Italian Parsley, Chopped
- 3 Tbsp Healthy Mayonnaise (see the picture at the end for one good option)
- 3 Tbsp Apple Cider Vinegar
- 2 Tbsp Olive or Grape Seed Oil
- 2 Tsp Celery Seeds
- Salt and Pepper to Taste
- 3 Tbsp Raisins (optional, not shown here)
- 1/2 Cup Chopped Walnuts (optional, not shown here)
After chopping your apples, fennel root, parsley, and fennel leaves place them all in a medium sized bowl (add raisins and walnuts if you’re using them, too). Whisk together the mayo, vinegar, oil, celery seeds, salt, and pepper, then stir it into the veggies. Enjoy!
