Simple Caprese Snack is serious yum-yums! It is high in calories, but they’re healthy calories, that will leave you feeling full for a long time. If you eat a small serving it is a great afternoon snack or party appetizer!
There are a few health benefits in this Caprese salad mix. First, there’s a ton of healthy fat, both from the olives and the oil the tomatoes are in. These kinds of fats are essential to your overall health and ability to function well. In my weight loss and health journey I have not really limited these healthy omega fats. My nutritionist actually encourages me to eat a lot of them, because my particular body type needs it! Second, the olives provide prebiotics, which feed the healthy flora in your gut. Keeping your gut healthy is a vital part of health and weight loss, because without a healthy gut it is impossible to properly absorb the nutrients and building blocks your body needs to heal itself. Third, the tomatoes have lots of phytonutrients, including lycopene, which helps fight cancer. Fourth, basil has a ton of vitamin K, along with trace minerals and fiber. It is anti-bacterial, and contains flavonoids that protect your blood cells. Go heavy on the basil!!!
Note about the cheese: I do not consider cheese to be a health food, but it does have some protein in it, and omega 7 fatty acids, which are good for your skin if you eat them in moderation. I don’t eat dairy for the calcium. Dairy makes your body acidic, so your system uses extra calcium to alkalize itself…it kind of undoes the benefit of the extra calcium in the cheese. I like using fresh mozzarella, because fresher cheeses are better for you than aged cheeses.
If you have diabetes make sure not to overdo it on snacks like this. Healthy fats should be a large percentage of the calories you eat, but it is important to cut way back on your overall caloric intake, especially at the beginning of your journey to reverse the disease.

- 1 Cup Sun-Dried Tomatoes in Extra Virgin Olive Oil
- 1 Cup Fancy Olives
- 1 Cup Fresh Mozzarella Balls (the small ones)
- 1-2 Cups Fresh Basil
- Splash of Balsamic Vinegar
Simply set the first 4 ingredients in mini dessert dishes, or mix them all together in a large bowl, and let each guest serve themselves. Of course, double or triple the recipe, depending on how many you’re serving. Sprinkle with balsamic vinegar.
