I’ve been eyeing all those recipes for easy vegan ice cream on the social media sites, and finally decided to make one of my own! Southern California has been pretty cold this week, but I’m sure it’ll warm up again soon. This Vegan Mango Lime Ice Cream is really refreshing and delicious, and you’ll never believe how healthy and simple it is to make. You can either serve it super soft, like a milk shake, or let it set up in the freezer, then serve it in scoops. (If you want to scoop it, make sure to let it sit at room temperature for a few minutes before serving).
Don’t you love the thought of eating ice cream that’s good for you? I mean, really…dieting and eating healthy do not have to suck! That’s kind of the theme of my blog! Well, one of them, anyways. I hope you’ll teach that lesson to your children! What a great way to grow up, without being terrified of food, or addicted to the stuff that kills you! I think parents have the power to change our culture, and we do not have to teach our kids according to popular belief about food. Show them a better way!!! Ok, that’s my sermon for the day.

Mangoes are high in sugar, but the base of this ice cream is coconut cream, which is high in fat and helps the body regulate sugar levels. If you are diabetic or need to really watch your sugars, eat this ice cream in moderation. Actually, that’s kind of true for anyone, and it’s true for most foods!
