Leprechaun’s Mint Chip Smoothie
I was trying to be creative with my green smoothies, and share an idea with you that I hadn’t seen before, so I made these Mint Chip Smoothies. Then, after I had developed a recipe that was worth sharing (it took a couple tries), I started to see the idea all over social media. So, I guess it’s not as creative as I thought! Ha! Oh, well. It’s still pretty tasty, and a fun, healthy way to eat green food in the month of March. This smoothie would be a great after-school snack for the kids on St. Patrick’s Day!
We have a chocolate mint plant in a container in our yard, and I eat some a few times a week. If you’re not familiar with this kind of mint, it has a bit of brown around the edges and smells like minty chocolate. I love it! By the way, if you grow mint in your yard, make sure to contain it, or it’ll take over your yard!!!
I do recommend that you grow mint in your yard or on a patio if at all possible. It’s health benefits are many! Mint aids and soothes digestion, relieves headaches, and relieves respiratory irritation. It is super easy to grow, but can be bought at any grocery store if you prefer not to. Before we get to the recipe for the Leprechaun’s Mint Chip Smoothie, I want to invite you to join with others who are making healthy changes. - 1/2-1 Bananas (Barely ripe)
- 1/2 Cup Unsweetened Almond Milk
- 1/4 Cup Fresh Mint Leaves
- 3/4 Cup Organic Baby Spinach
- 1/2 Tsp Peppermint Oil
- 1/4 Cup Raw Walnuts
- 1/2-1 Cup Ice Cubes
- 1 Tbsp Raw Cacao Nibs
- Place all of the ingredients in your blender and run it until it becomes very smooth. Start with half a banana, taste it, then add more as needed. I thought it was refreshing and light with only a half, but you may prefer it sweeter.
- Add the cocoa nibs and run it again for just a few seconds. I like the cocoa nibs to add some chunkiness.
- Pour the smoothie into a cup, garnish with mint and extra cocoa nibs, and enjoy!
If you have trouble getting your ingredients to combine, try adding more liquid. The individual attachment for the Ninja works perfectly for this smoothie, but I don't like their larger blender (it leaves huge chunks). I've heard Nutribullet works really well to make things smooth if you want a larger blender.
