Guess what I got for Mother’s Day?! A new lens for my camera, along with a couple of filters, that will help me take beautiful pictures! I’m so excited, so excuse me for the plethora of pics in this post! I couldn’t help myself. I’m still learning how to use my new toys, but am so happy with how these pics turned out!
When I was looking for egg recipes to share on my Tumblr account for Mother’s Day brunch ideas I realized that I don’t really have any egg recipes with decent pictures. So, here you go! These dairy free scrambled eggs with rosemary and chives are seriously to die for, and they’re super easy to make.
Eggs are full of healthy nutrition! They’re high in protein, choline, and a bunch of other necessary nutrients. If you’re worried about how they make affect your cholesterol levels, check out this article. I found it very helpful!
If you are diabetic, this recipe is especially good for you, because it contains rosemary, chives, and coconut, which can help regulate blood sugar levels. Some tests are showing that rosemary may work to inhibit Type 2 Diabetes related enzymes in a similar way to some of the prescription drugs. I’ve read that scientists need to do more research to confirm this, but isn’t that exciting?! Rosemary is super easy to grow in your yard, too!

Dairy Free Scrambled Eggs with Rosemary and Chives are a delicious, healthy breakfast. They're fancy enough for a brunch, and easy enough for a weekday!
Combine the eggs, coconut cream, salt, pepper, and water in a bowl and whisk them well. Don't worry if the coconut cream doesn't mix well...it will melt when you cook the eggs.
The key to delicious scrambled eggs is to cook the slowly, over low heat, and stir them a lot. Spray the pan with coconut oil, and heat it up a bit before adding the eggs.
Add the eggs and slowly stir them, making sure not to burn the bottom. When the eggs are almost finished add the herbs. Enjoy warm!
