This Coconut Curry Chicken, with sautéed onions, only took about 25 minutes (or less) to prepare, and it is super tasty and healthy! Two of my kids loved it, but the little guys didn’t. If you have some picky eaters it’s easy to adapt this recipe to fit them, too. Simply leave out some of the chicken tenders from the marinade, and cook them with sea salt and pepper. My littles like to dip theirs in organic ketchup. I love easy meals that please both parents and children!
