Chocolate Raspberry Brown Rice Cake
One of the things that got me into trouble with food and lead me to develop diabetes is that I LOVE eating something sweet at the end of the day. It’s hard for me to unwind after the kids go down, without something tasty and comforting. Can you relate? Well, the good news is that you don’t have to give up eating dessert, in order to be healthy. There are, however, some changes that need to be made if you want to lose weight and be healthy the natural way. This Chocolate Raspberry Brown Rice Cake is my go-to treat for the end of the day. It only takes a few minutes to prepare, and it’s rich, sweet, and good for you.
One tip for leading a healthy lifestyle is to stop eating at least an hour before you go to bed. Your body sees food as fuel, and you use less of it while you’re sleeping. Instead of burning the before bed snack as fuel, you’ll store it as fat. Another issue with eating too close to bedtime is that your body will be metabolizing, when it should be calming down and getting deep sleep. Deep sleep is a vital part of losing weight and being healthy. God made our bodies with an amazing ability to heal and restore themselves, and a lot of this restoration happens during sleep.
A Chocolate Raspberry Brown Rice Cake is much lower in carbs than most desserts! It’s also higher in fiber, healthy fats, and protein, making it a good fit for diabetics. The raw cacao nibs add a delicious crunch and rich flavor, as well as flavonoids, which are powerful antioxidants.

- 1 Brown Rice Cake
- 2 Tbsp Cashew Butter (or any nut butter)
- 3 Tbsp Raspberries (frozen or fresh)
- 1-2 Tsp Raw Cacao Nibs
- 1/2 Tsp Xylitol
- Load all of the ingredients up on your brown rice cake in the order I've written them. Enjoy!
