Yay for summer fruits! Are you enjoying them yet? Sorry if you live in the southern hemisphere, where winter is coming, but up here in California we’re enjoying peaches, nectarines, strawberries, blackberries, blueberries, watermelons, plums, apricots, and of course, cherries. I’ve been on a fruit frenzy lately, and this Chicken Cherry Salad is a delicious, light dinner I threw together the other night.
I talked a lot about cherries in my recipe for “The Best Diabetic Snack Ever,” so today let’s talk about spinach a bit. It’s almost impossible to overemphasize the importance of leafy greens in your diet! Even if you don’t make any other changes, simply adding a salad with dark greens a few times a week will improve your health a lot (if you’re not already doing so). By the way, if you really can’t stand the taste of them, try mixing greens into a smoothie. There are tons of smoothie recipes on this site…just search for “smoothie” and you’ll see a bunch of ideas. Spinach is full of flavonoids and antioxidants, which help you fight off diseases, ranging from the common cold, to cancer. It is high in iron, vitamins A, B2, C, and K.
