Paleo Peppermint Hot Cocoa
Paleo Peppermint Hot Cocoa is a “must have” in the holiday season! It is rich and creamy, dairy free, gluten free, and diabetic friendly, especially if you use the xylitol to sweeten it. My whole family enjoys this treat!
Traditional hot cocoa is not a great option for diabetics! This Paleo Peppermint Hot Cocoa cuts way back on the sugar, though, especially if you use xylitol to sweeten it. Xylitol is a natural sweetener, that has a Glycemic Index number of merely 7, as opposed to sugar, which is 100! It also may help prevent cavities. Some studies have shown that coconut sugar
is also significantly lower on the GI than normal sugar, so it is a great option, as well. If you are committed to the Paleo diet, go with the coconut sugar. If you really need to watch your sugars, play it safe and use the xylitol!

Serves 2
- 1 Can Coconut Cream
(Light
is fine if you want to save a few calories)
- 1/4 Cup Almond Milk
- 1/3 Cup Unsweetened Cocoa Powder
- 1 1/2 Tsp Peppermint Extract
- 1/4 Cup Coconut Sugar
or Xylitol
(xylitol is low carb and natural, but not paleo)
- 1/4 Tsp Sea Salt
Combine all of the ingredients in a medium sized ceramic non stick pot over medium heat. Stir and heat until it is the desired temperature. Serve warm and enjoy!
