Sometimes I just want a really filling, fresh salad for dinner!  When health experts try to convince me that lettuce is a great way to fill up, however, I laugh, because…well, come on.  Let’s be honest with ourselves and admit that lettuce does not leave you feeling satisfied and full!  If my main course is a salad, it better be full of calorie rich foods that won’t make me feel like a ate nothing at all.  This Italian Salad does the trick for me, and it is super healthy and easy to make!

Pretty much every ingredient in this salad is packed with nutrients, but two of my favorite superfoods in there are oregano and artichokes.  The oregano adds a spicy kick of flavor, and is also very good at boosting your immune system and killing off harmful viruses and bacteria.  Oregano is easy to grow, and I highly recommend that you keep a plant in your garden, so you can add it to your savory dishes.  Try to add it after you cook your food, because the health  benefits and spicy flavor are best raw.  Artichokes are good for helping you detox.  They are particularly useful for cleaning out your liver!

Italian Olives
We found these pitted green olives in a jar at Costco, and they are SO good! I usually don’t like green olives, but these ones have the milder flavor of black olives. Olives are quite good for your digestion, because they feed the healthy flora in your gut.

  1. Toss together all of the ingredients in a medium bowl, then serve on individual plates. Or you can just combine all of the ingredients on the plate or plates you serve them on. Enjoy!
