Healthy(er) Pumpkin Chocolate Muffins (Grain Free, GF)

Gluten Free Pumpkin Chocolate Muffin

I like to have fun with food, especially on holiday weeks.  Tomorrow is the day before Halloween.  The kids and I are going to a local nursing home in costume, so I thought it would be fun to have a special breakfast that goes with the season!  These have 6 eggs in them, so they have a lot of protein.  They can be added to fruit and a salad for a very well rounded breakfast!  I followed the recipe pretty closely, but added half a cup of dried cranberries, a teaspoon of pumpkin pie spice, and sprinkled the tops with pecans.  I also exchanged the 6 oz of unsweetened chocolate bar with 3/4 cup cocoa powder.

If you don’t have coconut flour try using almond flour.  If you do this, though, I would recommend using the cocoa powder, and not the cocoa bar, because almond flour doesn’t absorb liquid and it may mess up the texture.  The cocoa powder will compensate.
