One of the most common questions people ask me is “What should I eat for breakfast?”  Breakfast is a tricky meal, because most of us are usually in a hurry.  They want to eat something filling, quick, and healthy.  In this article I’ve compiled a list of healthy breakfast ideas, which will hopefully inspire you to start your day well!  Some of these ideas are ideal for “on-the-go,” and others are good for a slow weekend morning at home with the family.

Mint Berry Smoothie

Let’s start with smoothies!  Smoothies are a great option if you’re in a hurry.  You can keep bags of frozen fruit and veggies in the freezer, add some water or 100% juice, some nuts or yogurt, throw it in the blender, then take it with you in a covered coffee mug. Here are some of my favorites:

Dairy Free Scrambled Eggs

My favorite source of protein for breakfast is eggs.  Many times I’ll make a smoothie and fry up an egg.  If you want to be a little more creative with your eggs, here are some ideas:

Creamy Buckwheat

If you’re in a real hurry, try some whole grain gluten free cereal with almond milk.  Top it with fruit and nuts for a complete nutritional meal.  If you have time at the beginning of the week try making a whole pot of creamy buckwheat, for quick breakfasts that’ll last a few days.  I’ve included the link to one of my buckwheat recipes below.  Overnight oats (make sure they’re gluten free) are a great option, too, but I’ve found that buckwheat affects my blood sugar levels less than oatmeal.

Paleo Granola Bars

Granola bars or granola are more great options for a quick breakfast.  Or, if you’re really needing to rush out the door, grab a handful of nuts and raisins.  It’s better than nothing!  Here are some links for my favorite granola and granola bars…some are home made, and some you can just buy and keep in your pantry.

Gluten Free Chocolate Pancakes

Of course, if you have a little more time in the morning, there are tons of recipes for Paleo or reduced carb pancakes and other treats.  Remember, you can always make these treats ahead of time and freeze them for a quick breakfast later in the week!  Sometimes I’ll make a double recipe of pancakes for dinner, and save the leftovers for breakfast.  The toaster oven does a great job of reheating them!  Here are a few of my favorites.
