This Gluten Free Coconut Granola tastes like oatmeal cookies! The kids really enjoyed it for their afternoon snack after the beach today. When you buy granola from the store you don’t have control over the ingredients. Making granola at home is easy, and you can make it from real, whole foods and less sugar. The coconut in this recipe helps your body deal with the sugars in there. The oil and nuts also lower the Glycemic Index of the granola.
- 3 Cups Whole Grain Gluten Free Oats
- 1 Cup Unsweetened Shredded Coconut
- 1/2 Cup Coconut Oil (Melted)
- 1 Tsp Sea Salt
- 1/4-1/2 Cup Raw, Unfiltered Honey or Pure Maple Syrup
- 1 Cup Nuts (Chopped)
- 2 Tsp Cinnamon
- 1 Cup Dried Cherries or Cranberries
- 2 Tsp Vanilla
- 1/2 Cup Ground Flax Seeds
Pulse the oats in a food processor a few times, then mix together all of the ingredients in a large bowl. If you use the unfiltered honey you’ll have to mix it more than with the maple syrup. I prefer the flavor of the honey, though. Make sure there are no large clumps of honey.
Heat a large skillet over medium heat and add the granola mixture. Cook, stirring often, until it is light brown. Your house will smell so good! You can use Gluten Free Coconut Granola on top of yogurt, as a breakfast cereal, on top of fruit, or on its own. We enjoyed it with coconut cream and dark chocolate chips!
