Chocoraspberry Ice Cream


Summer is a great time for frozen treats!  Well, this Berry Chocolate Dairy Free Ice Cream was sort of frozen…I need to turn my freezer temperature down to get my ice cream maker to work better!  The cream tasted really good just like this, though…kind of like a thick, cold pudding.  I added some chia seeds, too, which thickened it up more.  If you want it really frozen, make sure that your ice cream maker has been frozen for a few days, and your mixture is quite cold before you try to freeze it.

Berry Chocolate Dairy Free Ice Cream is a very simple recipe, and the kids love it!  I highly recommend getting your kids to help you make it.  Cooking together is a great way to connect with children, while teaching them valuable skills and healthy eating habits!

In case you haven’t read my other posts about chocolate, I’d like to remind you of how healthy it is!  It has a TON of fiber and iron in it, as well as some trace minerals.  My nutritionist says that women tend to crave it once a month, because they need extra trace minerals during that time.  In case that’s not enough to convince you, chocolate also has neurotransmitters in it that make you feel happy!

  • 1 Can Light Coconut Milk
  • 1 Can Heavy Coconut Cream
  • 1/3 Cup Unsweetened Cocoa Powder, Sifted
  • 1/2 Cup Reduced Sugar Raspberry Jelly
  • 2 Tsp Vanilla
  • 1 Cup Fresh Blueberries or Raspberries
  • 1/4 Cup Coconut Sugar or Xylitol

Whisk together all of the ingredients and chill for a few hours.  I actually put mine in the freezer for a while to make it really cold!  Make according to the instructions in your ice cream maker.  I basically just pour mine in the frozen basin, plug it in, and press “On.”  Serve in fancy dessert cups for a fun presentation.  Enjoy!
